Farm school

On booking farm tours are organized for students about topics listed below or about specific topics you can ask us:

1. Organic farming and organic animal production

topics:

- soil

- plants: cereals and forages

- animals

- pasturage and feeding

- sheepfold

- animal welfare

- milk production

- lambs

- wool

 

Lessons include:

Farm tours and the observation of  cultivations focusing on plant status of each season.

Visits to sheepfold and the observation of animals on pasturage.

Farm holders will be present to answer questions

On request the lessons end with cheese tasting at the farm reception room.

 

2. Cheesemaking

topics:

- milk

- dairy

- pasteurization  and raw milk cheese

- vegetable (Cynara cardunculus) and animal rennet

- milk clotting

- cheese ripening

 

 

Lessons include:

Show of cheese making unit and procedures by farm holders.

Dairy tour along with ripening rooms

Tasting of fresh and aged cheeses

3. Cheese tasting

- Cheese types

- Senses involved in cheese tasting

- visual inspection

- olfactory inspection

- taste inspection

Guided tasting of Ricotta and of fresh and aged Pecorino
